Recipe of Indian pav bhaji.

Ingredients:
- 2 cups mixed vegetables (such as potatoes, carrots, peas, and bell peppers)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/2 cup water
- 2 tbsp oil
- 2 tsp pav bhaji masala
- 1 tsp ginger-garlic paste
- Salt, to taste
- 2 tbsp butter
- 8-10 pav (bread rolls)
Instructions:
- In a large pan, heat the oil and add the onion. Cook until the onion is translucent.
- Add the ginger-garlic paste and cook for a few more minutes.
- Add the tomatoes and cook until they are soft and mushy.
- Add the mixed vegetables and 1/2 cup of water. Cover and cook until the vegetables are soft.
- Mash the cooked vegetables using a potato masher or a fork.
- Add the pav bhaji masala and salt, and mix well.
- Cook for a few more minutes until the mixture is heated through.
- In a separate pan, heat the butter and fry the pav (bread rolls) until they are golden brown.
- Serve the pav bhaji hot, with the buttery pav on the side.
Tips:
- You can customize the recipe with your favourite vegetables
- Add more or less pav bhaji masala depending on your taste preferences
- Serve it with chopped onions, lemon wedges, and coriander leaves for added flavor
